How to Prepare Black Beans
Soak
• Soak 1 cup beans in 4 cups water for 2–4 hours.
Cook
• Drain, rinse, and add to a pot with 3 cups cold water.
• Bring to a boil, then simmer covered for 1½–2 hours until soft.
• Do not add salt early as it can toughen the skins.
Use or Store
• Drain and use immediately
• Or refrigerate cooked beans (up to 2 days)
